Courgette, Ricotta and Mint Parcels

I had a small glut of home grown courgettes recently so happened upon this Georgina Fuggle recipe for courgette, ricotta & mint parcels when googling recipes to use up vegetables. They were so quick and easy to make for my barbecue at the weekend they may well replace my standard quiche as a vegetarian side. The flavours were quite mild but nice and refreshing with the hint of mint. Hopefully my dozens of green tomatoes will ripen soon and I will be bringing you tomato recipes then!

Fig Frangipane Tarts

My favourite bakery in my hometown does an excellent line in fruit frangipane tarts and vary their filing from raspberries, blackberries, peach and pear so thought I would try a variation using fresh figs seeing as they are so beautiful and in abundance right now.

Please excuse my use of ready-rolled pastry, you can of course make your own, but I have been struggling with toothache this week so feeling grotty and on antibiotics again. When I saw the ready-rolled pastry in the reduced section of my local convenience store last night I saw it as a sign and decided to cheat at the first stage of this recipe.

Mini Lime Meringue Pies

This post was born out of the need to use up a lot of eggs before I go away so you may curse my frivolous use of whole eggs in the lime curd and the subsequent redundant yolks from the meringue. You could of course use another curd recipe that used yolks only but these generally require the use of cornflour and I much prefer a cornflour free curd.

This recipe also leaves a lot of surplus lime curd which can be decanted to a jar and stored in the fridge for other uses or another batch of pies.

Onion Chutney & Cheddar Palmiers

A few weeks ago I bought Jo Wheatley’s new book Home Baking and whilst flicking through it, came across this scarily simple but impressive recipe. My workmate Tracy requested cheese and biscuits over cake for her office birthday celebrations last week so I thought it would be a good opportunity to try out this recipe and use up some of my homemade caramelised red onion chutney. The original recipe calls for 2 tbsps of chutney but I doubled the amount as it didn’t seem to go far. You could also use a thin layer of chilli jam and Cheddar or Marmite and Gruyère for different flavours.
